Tella
Tella is an Ethiopian traditional fermented beer-like beverage made from varieties of cereals and a herb locally called gesho (Rhamnus prinoides). Tella resembles commercial beer in that it is made of malted barley and other grains, with the addition of gesho as a traditional hop
Injera
Injera is fermented Ethiopian ethnic traditional staple food prepared usually from teff flour. Almost all Ethiopians consume this food at least once a day. Injera preparation is composed of many steps, starting from grain preparation to baking; these all steps are still performed with indigenous knowledge with traditional practices. This Ethiopian national super food appreciating in many Western countries due to its superior nutritional properties, especially its lack of gluten and good mineral compositions (Rich in Iron).
